Mindful Munchies: Simple Bliss Balls

In case you're new to what Mindful Munchies is all about, let me give you a quick little intro.

For me, cooking is a super intuitive, creative, personal process – and trying to perfectly measure ingredients so I can share recipes with peeps was, honestly, sucking the fun right out of the cooking process for me!

Enter, Mindful Munchies – a series where I share super simple, nourishing recipes with loosely measured ingredients and suggested directions on how to make them all come together. I’m hoping this will inspire you to get creative in the kitchen, be super mindful of what your body’s asking for, get better acquainted with your intuition and taste buds, and empower you with some easy AF healthy treats that you can add to your repertoire.

Today we're talkin' bliss balls. And yeah, bliss balls can be a super convenient way to pack a whole shit-ton of superfoods into one little bite-sized morsel, but they can also be ultra simple and satisfying.

There are no rules in bliss-ball-land, but you do want to create a simple base to ensure they come together and don't crumble when you pick them up.

INGREDIENTS: (always organic, if possible)

  • 1 cup nuts (I like 1/2 cup almonds, 1/2 cup walnuts)

  • ½ cup desiccated coconut

  • 6 medjool dates, pitted

  • 1 tbsp virgin coconut oil, melted

  • Himalayan salt

  • Bonus (but not required) ingredients you can play with: chia seeds, hemp hearts, cacao powder, cacao nibs, goji berries, matcha, powdered herbs/superfoods, collagen peptides, coconut butter, nut butters, essential oils (if they're safe for internal use), etc.

DIRECTIONS:

  • Add desiccated coconut and Himalayan salt (just a pinch) to a food processor and process until it's finely ground

  • Add nuts and process until they're finely ground and well combined

  • Add the dates and coconut oil (make sure the pits are removed first) and process until well combined

  • Add any other ingredients that you want to jazz your bliss balls up with and process one last time so they're well incorporated

  • Start rolling the mixture into balls (whatever size you want is perfect), sometimes it helps to pack the mixture together with your fingers before rolling into balls, just so they really stick together

  • Once all the mixture is rolled into balls, you can roll them around in a fun topping like desiccated coconut, cacao, or anything else that looks fun

  • Pop them in the fridge so they can set, and remove them as you want to eat them - they're best cold (when they get warm they can get a little melty/crumbly)
