smashed cucumbers
I’m convinced that smashing cucumbers makes them 800x more delicious. They become addicting like potato chips.
You can really dress them in whatever you like - they lend themselves well to all sorts of flavors. I personally like a base of fat, acid, and some tasty spices. Here’s what I whipped up today:
ingredients:
3 medium-sized english cucumbers (their skin is thin and easy to smash)
handful of olives, cut in half or quartered, based on the size
generous pour of good extra virgin olive oil
splash of apple cider vinegar
a few pinches of mother in law’s gochugaru chile flakes
a few pinches of everything bagel blend
pink himalayan salt to taste
black pepper to taste
do it:
cut the ends off of your cucumbers and discard
chop cucumber into big chunks
using whatever flat, solid tool you have (I used a heavy metal measuring cup) smash each of the chunks and discard any seeds that break loose
put all of the smashed cukes in a bowl, add all of the fixings, and give it a good stir
let it marinade for a bit, or start snacking right away (it’s kinda hard to resist)
